COAL FIRED BRICK OVEN PIZZA

There's pizza, and then there's pizza. And then - there's pizza "the way it was." At least that's how the proprietors at CBO see things.

In their view, "pizza the way it was" is pizza offering a distinctly unique, old-world flavor that can only be achieved through baking in a coal-fired brick oven (as opposed to the more common wood-fired brick ovens).

CBO, which opened in 2001, is a hip, Manhattan-style bistro attached to Del Ponte's Italian style bakery on Bradley Beach's main drag.

In addition to CBO's original pizza (mozzarella, tomatoes, olive oil, basil) there are 11 other pizzas to choose from including vegetable, bianca (all white cheeses) and patti pie, which is, Collaro said, like a bruschetta-topped pizza. All pizzas are made with homemade mozzarella cheese and come in three sizes - pizzette, medium and large.

Diners also may select from six antipastos and salads priced from $4.95 for bruschetta to $11.95 for a cold antipasto for four people.

The menu also offers antipastos, salads, hot panini and cold cibatta sandwiches and calzones.

Absolutely love this place. My husband and I live around 45 minutes from the shore and we have had the same routine for years now. We drive to Bradley, eat at CBO, get a cookie from the bakery next door and go to the beach! I love the house salad and we typically split a pizza.

I have been going to CBO since they opened. I wish I lived closer so we could go more often.

Great pizza! Great salads! Great service! We are regulars here. The food is consistently great. The atmosphere is always warm and friendly no matter how busy.

There is no place like it anywhere in the Shore area - a small, informal, but very hip bistro atmosphere with cool lighting and an ever-present seductively cool music soundtrack . The warm months offer European-like outdoor seating. The pizza? Like no other we've ever had anywhere. This is the kinda place you run into people you know and you smile at eachother in a way that conveys..."ah...you also know how cool this place is."
